Here's a great side dish that's really easy. If you haven't tried couscous before, now's the time!

1 1/2 cups chicken broth
1/2 tsp. salt
2 Tbs. olive oil or butter
1 cup whole wheat couscous
1 Tbs. parsley
1/4 cup pine nuts

Bring broth, salt, and oil (or butter) to boil. Stir in couscous, parsley, and pine nuts. Reduce heat, cover, and cook for 3 minutes. DO NOT OPEN, YET!!! Let sit for 4-5 minutes. Then stir to fluff up and serve. Makes about 5 1/2 cup servings.
